Dinner with Jim Burke

Event Description

As the final event of the Spring Dinner Series, the Center for Hospitality and Sport Management will be presenting Dinner with Jim Burke on May 28 at 6pm.   Join us for an exclusive dinner from Chef Jim Burke, former chef/owner of James..  The dinner will be accompanied by a complimentary wine paring courtesy of Jason Malumed of Chalkboard Wines.

The Dinner with Jim Burke event will begin with a happy hour at 6pm followed by dinner at 6:30pm.  The dinner will be held in the Academic Bistro on the 6th floor of the Paul Peck Problem Solving and Research Building at 101 N. 33rd Street. 

The meal for this event will be prepared by Drexel culinary arts students in Chef Mike Traud’s a la carte cuisine class with service by Drexel hospitality management students in Professor Paul O’Neill’s Fine Dining class.

Passed Hors d’oeuvres

Tuna Tartare, Black Olive and Chive

Cured Foie Gras Terrine, Fennel Mostarda, Brioche

Saffron Arancine

Squid and Polenta Skewers

 

1st Course

Chilled Cucumber-Avocado Soup, Salt Roasted Shrimp & Chili Oil

2nd Course

Stinging Nettle Tortelli, Bagna Cauda, Fried Chick Peas

3rd Course

Chicken Ballotine, Porcini Mushrooms, Swiss Chard

4th  Course

Artisanal Cheeses with Accompaniments

Lemon Verbena Pannacotta, Macerated Berries, Almond Tuile

 

The cost of the dinner will be $90 per person. Proceeds from the dinner will provide scholarships for students within the Center for Hospitality and Sport Management

The Center for Hospitality and Sport Management’s Spring Dinner Series features renowned chefs, authors, farms, beverage companies and purveyors.  The dinner series was designed to showcase and acknowledge several of the center’s collaborators, sponsors and partners.
